Made from Nebbiolo grapes which is a red grape mostly associated with the northern Italy region of Piedmont. Grappa is obtained through the distillation of bagasse, called the residues such as skin, pulp, seeds and clusters that remain once the grape has been pressed and its must has been extracted. Originally it was made so as not to waste these residues, but nowadays it is made in large quantities and marketed around the world.
The fermented mixture of bagasse and alcohol from the grape juice is heated until the alcohol evaporates. The alcohol is condensed and separated, thus obtaining a high alcohol concentration (between 40% and 45%).
Piedmontese grapes are characterized by being unctuous and sweet.
