L'Ermita, the oenological jewel of Álvaro Palacios, is a wine that symbolizes the excellence and soul of Priorat. Its elaboration, a meticulous work with Grenache from vineyards over 60 years old and a small proportion of Cabernet Sauvignon, seeks to reflect the essence of the land. After aging for 18 months in new French oak barrels, the result is a wine of extraordinary strength and elegance. Tasting notes: to the eye it presents a cherry color with violet trim, which anticipates its depth; on the nose it displays a fine and complex perfume of ripe black fruit, enriched with mineral notes, hints of fine wood and a subtle liqueur background; on the palate: It is concentrated, ample, fleshy and oily, with fine tannin and a fresh finish that makes it vibrant. Álvaro Palacios came to the town of Gratallops with the aim of capturing in his wines the unique character of the Priorat, a land of clear essences and Mediterranean sun. Influenced by the monastic past of the Carthusian monks, who cultivated vines in the region for centuries, Palacios works Grenache vineyards on steep slate slopes. These vines, exposed to more than 3,000 hours of sunshine per year, low rainfall and the refreshing summer sea breeze, give the wine its uniqueness and complexity.
