Philippe Pacalet is an oenologist specialized in microbiology, nephew of Marcel Lapierre (pioneer of natural wine). He worked for 10 years at Domaine Prieuré Roch before founding his own project in Beaune in 2001. His philosophy is one of minimal intervention: fermentations with indigenous yeasts, whole clusters, hand punching down, barrel aging 15-18 months, no filtering and very little sulfur only at bottling. Since 2007 it has been producing in a winery acquired from the De Montille family in Beaune. It has expanded its range in 2022 with new parcels in Pommard and Vosne-Romanée, in addition to recovering cuvées from the northern Rhône.
