This appellation, which once produced the largest volume of natural sweet wines, extends over 86 municipalities in Roussillon, from Albera to Corbera. It therefore occupies very different terrains, which have in common the aridity and poverty of their soils and the production of very ripe grapes. It is not by chance that the village of Rivesaltes is the eponym of this appellation. Most of the sweet wine production comes from its stony terraces and the mountain ridge that runs from Rivesaltes to Salses. It was also in Rivesaltes, a large wine-growing village, where, only thirty years ago, most of the traditional houses that sold these wines were still located, along with numerous trades related to the vineyards and wine, such as that of the wine merchant.
Rivesaltes can be white or red, depending on the varieties found at the origin of their production. Nowadays, they are generally old vines, trained in traditional goblet. We find amber or russet colored rivesaltes, and each of these categories can claim the mention "hors d'âge" after a minimum of five years of aging. It should be noted that the life of a rivesaltes is eternal, and that many wineries have very old and valuable productions.
